Great base for seeing Cappadocia
We were in a room at the bottom of the hotel, which is effectively underground, but it didn't bother us as it was a place to sleep and shower, in between our sightseeing trips out. The room was nice and big, the bed was very comfy and the shower was hot. There was a wardrobe and some drawers, and a safe in the wardrobe. The space either side of the bed was limited in our room, but may be more accessible in others. There were only stairs down to our level too, so check about accessibility first if it is an issue for you. The staff are very helpful and polite, particularly the chap who does the night shift in the office.
The location is great. It is on the edge of the old town centre, mintes walk from the bus station and taxis, and minutes walk from the centre of Goreme. It took us 15/20 minutes to walk to the viewpoint overlooking the town and the surrounding valleys, where you get a great early morning view of the balloons when they go up. The hotel itself has a breakfast room at the top of the hotel, and you can go up there and get a good view of the balloons flying from their launch points, which are either side of the town.
There is no tourist info office in the town, and where ever you ask for a map, you get presented with the same sketch style 'map', which is lacking in detail. If, like us, you are interested in following walking trails, the info on the 'map' is merely a dotted line in the rough area of where you want to go. In hindsight, it added to the adventure of our expeditions, but at the time we'd have liked more detail.
Some sort of divine intervention assisted us on our planned walk to Uchisar. We were going to walk up Pigeon Valley to get there, but decided to walk up the road to the viewpoint behind our hotel and then on, coming down the valley on the return trip. Thank goodness we did, as the top of Pigeon Valley was very steep. We were scrambling down parts of it, so it would have been a nightmare to climb up. The valley ends 5 minutes walk from the hotel. Although walking up a road doesn't sound interesting, it takes you along the ridge overlooking the valley and has some amazing views, so I would say it is well worth it, and the majority of it has a path well away from traffic, which was not heavy in any event.
The following day we were going to walk Love Valley, so got a taxi the short trip to the top, and walked down. Again the top is steep, so definitely the right way to do it in my view. There is a little shack cafe near the end of the valley, where we had welcome glasses of Turkish Cay (tea) which is very refreshing. The walk back into the town from the end of the walk was about 15/20 minutes with not alot of shade, so bear this in mind when making plans. These valleys are well worth walking, even if you go in and out the same way, for an easier experience. The geology is incredible with a different photo op around every corner.
For context, we are both in our 60s, so what I have described is manageable for alot of people. As these walks are a little off the normal tourist track (sitting in a minibus or car getting driven around) you don't see many people. This was a relief as you come across alot of people at the popular photo spots, taking photos for their social media, which always seem to involve them getting right in the way, posing and pouting. You can be about to take a photo and someone will walk right into your shot without a care in the world.
As to food, we can recommend the Woodfire Grill, which is 5 minutes walk away. Try the Pot Kebabs which are served with fire and all sorts of drama. Also, only 3 minutes from the hotel, there is a small family run restaurant called Cappadocia Cuisine, which we really enjoyed. Up in Uchisar we had lunch in a little place called the Uchisar Cave House which had the most amazing view and lovely gozleme. It was a short walk away from the castle and all the very touristy places.
We loved our trip to Goreme and would thoroughly recommend the Sapphire Stone as a base. The only thing missing for us was somewhere to sit outside at the end of the afternoon, but there are plenty of bars and cafes only minutes away.

Great value, kind staff, no terrace
Breakfast is great. (I know many hotels are like that but they do have wonderful omelette).
The staff gave me a good deal and was really kind! I was taking wedding photos and delayed my checks out. They were so kind and supportive! I’d recommend this to my friends!
